nutrition again from a seminar

Yesterday, I joined the thesis progressive presentation of the Ph.D. scholars in agriculture and it's products in Thailand. The Agricultural Research Development Agency was the sponsor of this program. There were many interesting works, particularly about food. There were finding of mulberry cultivars for high anthocyanin, GABA from rice for mixing in beverages or food, fishes and fish feeding, natural power [Solar energy, wind, water etc.] planning by remote sensing for human and local uses. Listening from various lectures, finding that, we tried to find more opportunity and choice for our living, a part from our normal routine.
For me, I prefer brown rice[semi-dehulled rice] which is high vitamin B. From past study tour experience, there were many substances which were usuful to our health in rice husk, such as Inositol, Magnesium, etc. For breverage, I learnt about yoghurt and fruit juices. Fruit and vegeable are essential as we have to eat many kind of them for vitamins, anti oxidants and fibers, besides, fish's oil and protein are also good nutrition. These are the basic daily diet and others will be the alternative for choice. Don't eat too much meats and don't forget daily exercise. Thirty minutes brisk walk is the one of choice. It is an easy way. Don't spend too much on eating but eating is maintaining of life as someone said "you are what you eat"
I am going to Chiangrai tonight and Chiangmai on Saturday. There must be some idea from Travelling I may like to note here. We must be fed up with the nutritious information. If I have something else I will do it right away. Thanks for attention. Chavalvut.

phytonutrients, organic substances from plants

I read about phytonutirents and found that they were interesting for health. There were many substances in plants which maintained our normal metabolism and prevented some diseases such as cancer, heart attack etc.
Saying that we ate various kind of vegetable and fruit in colours of green, orange, or red, we got many substances including vitamins and some elements. Besides, yoghurt acted like an probiotics containing advantage microorganism. Soybean, onion, brussica [cabbage, cauliflower, chinese kale etc] and other vegetable helped to prevent cancer too. This article encouraged us to eat a lot of fresh fruit and vegetable. [But,to make them clean from pesticides, wash them with running water about 2-3 minutes before eating.]
Substances and elements were as following:- vitamin C, vitamin E, betacarotene, polyphenols, bioflavonoids, carotenoids, lycophene, anthocyanin, zinc and serenium etc.
Genestein from soybean, stop feeding cancer cells by not building small blood veins to the cells, Indoles from brussica, Saponins from legumes, Lycophene from tomatoes, egg plant, Quercetin from onion, these substances were to prevent cancer and other diseases.
Other preserved food acted like the prebiotic [food that could not be digested in the large intestine for the probiotic bacteria to digest.] These could be the fermented food.
This statement is interpreted from a Thai article named Food Industry Thailand Sep-Oct 2007 by my ambitious effort. You have to forgive me if finding any mistake or wrong interpretation. I am not the nutritionist or chemist, just a man who is interesting. Please correct my mistakes in this statement if you know,for others to read. with my thanks. Chavalvut. I tried not to get hurt when I was forgotten

Blame myself, if someones forget me. There must be some mistakes, such as I keep some distance too far or I quarrel with the ones. If I want someone to think of me all the time I must make him/her closed to me, even he/her is good or bad. Going to see people and having good talk are important. Even I come from far away, I can be the close one by seeing him/her everyday. Therefore, if I understand this fact, I won't be hurt, when someones forget me. It's me to approach someones, I, afterward, will not wait for anyone coming to see me.
There was a story about an old man went to sit at the lake bank where a girl was swimming in the lake everyday. One day, he asked the girl if she was afraid of a crocodile. The girl said she was not afraid of crocodile because it never came but she was afraid of an old man, he came everyday. [ Just a joke ]
The one who never talk could get less advatage than the one with good talk. The successful working persons usually have good talk. They are intelligent, good memory and talk in good ways. The leaders' speech will be loud, clear and good contents. No sarcasm and no criticism. Never hear the successful ones talk about people in a bad way. And when the people listen to the sucessful ones, people will like them because of good talk. They will treat the listeners as important as they respect. If anyone has a habit of less talking, he/she should find the appropriate jobs which do not reqire talking such as technologist, doctor, writer, etc. The best investors need to have good talk as well. Don't be shy, keep talking in good ways.
How to respect the listeners, I used to know a man. He remembered the names of their colleages and had good memory with them by mentioning while he was talking. Giving a chance to the listeners talked and he listened and accepted their idea by responding. Treated the people being leaders in different ways. Not one man's show. Didn't hate, didn't love didn't be close to special one. Everyone were important equally. If one wanted to be close to anyone, didn't let anyone know. These were my behaviour when I worked for the government many years ago.
Now, I am staying home and looking back to my past. I hope these written notes will be useful to the youngs, particularly my children if they read these articles. I can not go back to the past but the young generations who read these articles will transfer these experience and represent me in their generaton. Chavalvut.

10 elements for being good health from a piece of hand out

1. If we eat vegetable and fruit everyday, we will get away from large intestine cancer. Also the same, I used to attend a seminar on nutrition organized by WHO, Osaka, long time ago, one solution came up with eating 400 kg of fruit and vegetable everyday, we could reduce risk of digestive system cancer. In the hand out, we should be interested in cabbage, carrot, orange and apple. [ but in Thailand, there are various kinds of fruit and vegetable, including food ingredient and herb. Each contains advantage and disadvantage substances, take them all, ones by ones in each day.]
2. Being healthy for gum with mouth wash by TEA. Tea contains polyphenol which is anti bacterial growth substance. If we drink tea after meal, we can reduce risk of gum diseases.
3. Drinking water at least 5 glasses per day, we can reduce risk of large intestine and urinary bladder cancers up to 50 percent. I drink about a liter when I wake up in the morning.
4. Walking bare foot on the soft sand surface. I heard some one said about walking bare foot on the lawn. This might be the same thing, for blood circulated stimulation.
5. Evening sun light help to synthetize vitamin D. The lady who never touch sunlight may be suffered with breast cancer. Strong sun light in the afternoon is too dangerous. Wait for the evening rest.
6. Whole wheat bread [ brown rice should be included] There are many chemical substances and fiber in the husks. I heard about brown rice that it contains Gamma Orizanol, Gamma Amino Butyric Acid etc.which are our advantage for health.
7. Tuna Salad or fishes Menu strengthen memory efficiency. These reaction include eating some rich vitamin B2 food such as egg, milk, soybean, which help us being in good mood and good memory.
8. Quick walking. Exercise for heart and blood vessel fitness or heart beating fastly. Do it 20 minutes per day. For me, being in a hot weather in Thailand, I try to get sweat every day. But one of my problem, I have to remind, is my over exercise for almost 30 years and now I have bone deterioration in the neck, back and knee joints. Don't take too much exercise in each day.
9. Get good fat into the body. Fatty acid help to absorb vitamin A, D, E, and K. Unsaturated Fatty Acid from olive, beans,and Omeka 3 from fishes encourage energy and prevent cancer and heart diseases.
10. Just do nothing. Have a rest, by staying home alone, or do as we like. Don't rush the time. I like to walk back and forth everyday.

Spending time upcountry in Japan

I had an opportunity to spend time out of town in Japan. On the roads when we travelled, noticing that there was no old car at all. Why they used new cars, asking the group leader, knowing that the government increased taxes every years as the cars getting old. Therefore, changing new cars made the taxes cheaper or it was more feasible. The old cars were tore down in parts and the garages exported the parts to the other countries. The cars' size mostly were small to medium according to the small roads in the villages. There were no pick up car like ones in Thailand but there were some small trucks. On the roads, there were the parking areas in every certain distances. The parking areas comprised of modern toilets, elegant restuarants and souvenir or convenient stores etc. There might be a rule that the drivers must rest after driving in a certain period of time.
The low incomes were hard to own car becuase of the certain rules such as the self parking space, taxes etc. Bicycles riding were also common on the roadsides. The walking paths were big enough for riding. People such as students, housewives, retirers took bicycles to the near target places. They stricted to the driving rules. For example, the bicycles crossed the roads at the traffic lights in one row. Any riding on the paths would be in one row. These roadside scenery therefore looked beautiful for the foreigner like me.
I understood that we sat and slept on the floor in the Japanese houses. The houses were modern, clean and house's figures were Japanese style. There was no rural area because everywhere looked the same for me. For the safety, at the night time, if we opened the door or house window, the security guards or polices would come because the door opening connected with the alarm system. In the morning, I went for a walk in the village, the atmosphere were quiet, beautiful, nice weather, no homeless pets and there were places like parks for a walk or rest. They were the heaven of the residents.
For farming. Japanese were intent on their practices. Rice farming, they used the light reflected ribbons hanging covering the farms for preventing insects, and somewhere, farmers set the man puppets on farms to prevent birds. Even the farm were small, they tried making good quantity and quality yield. All rice farm looked uniform. Farmers also added value by processing and making end products and transported to the supermarket by themselves. There were several rice mill booths in the villages. Cooperatives were so strong there. there were many kind of business which the cooperatives offered including making the Parking Area business on the roadsides, the matchmaker services, etc. Farmers got farm input and machinery from cooperatives, probably in term of credit. But the processing of the raw materials to add value,until getting the end products such as white rice in the bags, farmers may do it by themselves.
Once I went to an orange orchard farm, It was the slope farmland by which the famer made the concrete blocks like the stairs. The walking paths and the roads for machinery were also concretes. The soil under the plants were covered with white plastic sheets. This white sheet was for making sun light intensity reflected to the fruits and made same yellow colour all around the fruits. It was so intensive.
For the dairy, and also livestock farms, they were clean and furnished with the practical technique which farmers thought of by themselves. There were not appropriate practices in the books but by their own experience and idea. Let me show 3 examples, one, they used the rice straws spreading on the 10-20 degree slope floors for manure. When the cows were walking, their feet pushed the rice straw down to the wide dishes at the low end of the pens' floor. The rice straws mixing with the manure the cows excreted could be eliminated by sweeping to the crop lands. Two, they sprayed water on the roof to cool the pens. And three, there were some space areas for animals to walk in term of animal welfare.
There are more thing in detail to talk about. I wonder if anyone is interested in particular items. I would like to finalize that I'd like to look at Japan and have it as a heroic model in my idea. These experience prove that everything can be done by working hard, thinking practically and do it as thought. Everything are invented by man. And we can do it by our brain. It's time we tried. Life in Japan

During my stay in Japan, life was so rushed. Schedule was full. I bet it was the same as general Japanese doing. They looked working hard. And they got some return with comfortable living and environment. I remembered every toilets were automatic, such as water valves, flushing. The toilet condition were very clean, everywhere. Roads were also clean and furnished with many trees or roadside parks. there were no dog manure on the roadsides.
Japanese food are popular among Thai young people. They are healthy and tasty. For me, I prefer Thai style but Japanese food are OK. At the time I visited, we had Japanese food every meals. Fortunately, they were Asian. The chopsticks were bamboo made and used for one time, then, thrown away.[very clean] I usually did not take any meat but fishes and watery meats were OK, plenty in Japanese Menu. I was not careful of germs or nematodes even we ate raw frozen food many times. I believed everything were safe in Japan. I went to the 24 hours convenient stores [ Lawson ] twice to buy some bananas because I had to have fruits before going to sleep.
In the toilets of the hotels or guest houses, there were tooth brushes and tooth pastes, razors, and other toiletries on the washing basins for the guest service. These were very common everywhere.
When you go to see the Japanese, remember that you must have your name cards, the exchange of name cards is a tradition of introducing each other. Aso, the exchange of gifts or souvenirs has to be thought of before going to Japan.
At the evening or early night,I observed that Japanese liked to stay out door when the weather were good. Outdoor climate were so beautiful for the Japanese. Except the drinking group, they could go to the restuarants, or some drinking bars. These were where Karaoke and Edamame [vegetable soybean] were consumed, together with beers or Sake. Young people could go to the shopping areas or the city centers. Another remembering, I believe, Japanese were strict with the rules. Being in the queue is common for them. Even they have big population, but the people keep being under rule and tradition, and these make them move fastly and having many people is not their problem. They share their rights in the public smoothly.
Japanese shopping areas were on the walking street out door covering with the roof all along the road. There were also shopping malls which look very elegant such as Sogo or Robinson etc. There were many kinds of shop such as 100 yen shops, Big Camera etc.
Finally, I regard Japan as a heaven whereas there still be hellish lands somewhere in the world. I have to end my writing now and see you next letter. Bye for now. Chavalvut

Japan again[ my favourite beverage and food]

The most favourite items in Japan is beer, sake and rice. I prefer beer because they contain low alcohol content. Many people even ladies drink beer with dinner meals. For rice, both steam and boiled rice are tasty and soft chewing. Sometimes they show aroma smell too.
During my visit to Japan last week, my happy time was eating dinner. We drank beer and sake every day. My stomach and brain recovered from alcohol after drinking rapidly. I hardly did it in Thailand. Drinking beer here is expensive compare to other drinks. Chavalvut

Just back from Japan

I have been to Japan many times, starting from 1971. This time I went to Yamaguchi, Wakayama, Kyoto and Osaka between August 26-31th, 2008. I was in the group who were looking for technology such as rice bran processing products, poly lactic acid polymer for plastic wares, or other laboratory processes. And, we met with the academic institute high rank staff to sign MOA for the cooperation in the future. This was a task of the office I am working for and my working contract will be ended at the end of October. It could be my last formal trip in my life.
Anytime I went to Japan, I impressed the cleanliness of the country. These included the public areas, resident areas, restuarants, tourist spots, etc. Event the public rest room or the rest room in the restuarants or the hotel areas were very clean and furnished with the new technological equipments such as automatic water valve, or automatic toilet cleaning system. Besides, Japanese were so neat, disciplinary, friendly, gentle, and good service. We could taste some food at the food stores even we didn't buy them. Japanese women were so cute and good mind.
The only thing I have not impressed was the expensive lives. Everything were so expensive such as food, hotel, drugstore, departmentstores, supermarkets. There were many 24 hours stores such as Lawson, Seven-eleven, etc.
For the scenery, Japan was so green with decorated plants every where. We went to Nara to see the biggest Buddha Statue in the temple. The site was ancient style, and green with plants and lawn. Don't have to say that they were beautiful. As a matter of fact, everywhere, there were parks,at which hill or water being a part in the scenes, . Saying that Japanese live with the traditonal houses, healthy food and beautiful environment. I am envious of their lives except for standard of living. Chavalvut Chainuvati
